Nearly half the food produced in America is wasted, and most ends up in a landfill. MU professor Chris Costello wants to combat the waste and its negative environmental impacts. She is working to recover energy and nutrients in organic food waste, reducing the volume and producing gas to be used for heat or electricity. She wants to make it easy for people to put their food into the right bin.
